Any website you visit is able to record your IP address because that's the way they deliver their site's web-page code and pics, etc. and it's the primary way the internet from/to works - IP address to IP address.
Consequently, that's also the pipe that's heavily (VERY heavily) monitored and protected by your personal security software (firewall, virus protection, email spam protection, etc.). There are also other ways to minimize the risk but, normally, they aren't necessary for casual internet users.
As for email, almost (almost explained in a minute) the only way anyone can get your personal email address is by receiving an email from you or receiving it from someone you've given it to. Therefore, be wary of sending it to anyone you don't know or who doesn't know to protect it in your behalf (delete that portion of text from their FWDs before they send to whoever THEY elect to share the remaining content with).
Now for that "almost"...
Virtually all web vendors and forums you interface with want/need to have your email address and, if they get compromised by a spammer/scammer, then you might become vulnerable. For instance, I avoid any subscribed association with Google and/or Google Groups - your email address gets plastered all over the place by those nincompoops.
