I'm guessing a satin finish using some type of oil although I haven't asked him. Considering they are walnut, definitely not stained.
The grips were finished using "Tru Oil" only. It's good stuff, I've done a bunch of wood stocks and forearms using it plus used it on an M1 Carbine I have just to spruce it up. Works great.
