Seat of the pants is really all you can do. If the bike is not pinging and the temps are bearable or its not turning on the heat management and shutting down the rear cyl your OK. By removing the Cat your going to feel less heat off the right side.
The Night Rider Xieds really only trick the ECU in closed loop to add fuel. Closed loop is pretty much your cruising area, no load, not WOT etc. So if you have pinging or problems under acceleration or load conditions you will need a real tuner to sort it out, in most cases with a stock engine even just adding pipes and an A/C will be Ok just not optimal with out a tuner.
