Unfortunately that doesn't work with the stock shocks. Let all the air out and they don't bottom out, nor do they even sag 1/3 of travel.The rear shouldn't sag more than a 1/3rd of the shock travel when loaded. Measure the bike with no air and empty between the bottom shock bolt and the strut. Now sit on the bike and get someone to measure and adjust air until you get it to settle in at 1/3rd travel with you on it. Whatever that air pressure is, is what you should run one up. Do the same test with you and your wife and try to keep it at somewhere between the 1/3rd and 1/2 of travel. Now you have the two air pressures you need. By the way, I've got a set of HD premium shocks I'd sell. I'll post pics if I list them.

Follow the guide in the manual. I go about 200 with gear on, and I run around 32psi.
