I don’t have any experience with the 5000, I do have the 7000 in 2 bikes. Never thought about waterproofing it, been caught in a few downpours, no problem at all. It has more power than the stock unit, but I would still advise getting an amp and better speakers. It is hard to see in direct sunlight, I bought a screen shield which helps a lot, still not perfect. The 7000 is much better than the stock unit, the only thing I miss is the weather band, which was hit and miss anyway and the connection to some functions of the bike.

Old post I know.
But mainly for future reference or once stocks reappear.

The 5xxx is 4x55w (peak) the 7000 is 4x100w (peak) both at 4 ohms. Oem speakers are 2ohm and 55w will push them hard (is head unit stable at 2 ohms beats me but had amps on order so didn't care.

If you were willing to throw in some cheap 4ohm speakers then go the 7000 other wise the 5xxx will push them to just as they distort.
Is the power the only difference between the 5k and 7k? I must admit I didn’t read all the specs, but I’m really enjoying my 7000.
